I’m really trying to stick to my healthy eating plan, which is going to mean getting creative, because I am one of those people that can’t stand to eat the same thing every day. Last night I made a spinach casserole from my “Hungry Girl” cookbook. It was pretty good, but I’m not sure it turned out exactly the way it was supposed to. (You were supposed to have 1 ingredient at room temperature, which I didn’t read until it was time to blend that ingredient in. Also, I have a convection oven that doesn’t always equal a regular oven.)
Anyway, today I couldn’t decide if I wanted oatmeal or yogurt for breakfast…so I just combined them! I cooked a serving of oatmeal in the microwave, spooned some vanilla Greek yogurt on top of it (the kind from Trader Joe’s….it is SOOOO good) and then sprinkled a little brown sugar on top of that. It was really good, much better than bland oatmeal…it tasted kind of dessert-ish, but not overly sweet. You should try it.
